Fruit and Nut Breakfast Quinoa
Fruit and Nut Breakfast Quinoa Bowl Recipe
- 1 1/2 cups cooked quinoa
- 1/3 cup dried cranberries
- 1/3 cup almond slices
- zest from 1/2 lemon
- Note: use more/less to taste
- 1 honeycrisp apple
- Note: use your favorite apple or pear
Immediately place the diced apple in a bowl of cold water with freshly squeezed lemon juice to prevent it from browning. Let it soak for about 10 minutes, then proceed.
Add all ingredients to a mixing bowl and toss together.
Enjoy as a side dish for breakfast, a weeknight meal or meal prep for ANY time of day! Store in the fridge for 6 – 8 days.
